Let’s Talk About Food – Supper Edition
Let’s talk about food, shall we? Why not? It’s been a while since I last wrote anything about food and with all this ‘Quarantine 15’ talk going around, it has me hungry!
Speaking of, did anyone gain the quarantine 15? Don’t tell if you don’t want to – I was just curious 🙂
Back to the food. Who discovered some really great supper recipes over the quarantine {side note, I almost typed the word “holiday” instead of quarantine! ha, what a gag!} Anyway, do share your faves please because I’m always looking for new ideas for this brood I have to feed every night!
Some of my favorite recipes come from two cookbooks: A Place at the Table – Kelly Minter {because I really love her as a human and she’s got great recipes} and Magnolia Table Vol. 1 – Joanna Gaines {because I’m just a really big fan of hers and her recipes are spot.on.} Another side note, sorry…, both of these cookbooks are meant for gatherings, isn’t that wonderful?
Before I get off track again, I keep a running list of supper ideas on my phone. Does anyone else do this too? I started keeping it on a piece of paper inside my pantry door, but then it ended up being behind all the aprons and I never saw it, and then forgot about it, and then got really frustrated about not having any ideas for supper, so I trashed the paper and moved the list to my phone.
Here are just a few of my go-to supper ideas:
- Quesadillas – The chicken I use is the Mojo rotisserie chicken from Publix. Add a Mexican blend cheese to the quesadilla and grill it on the stove top. Serve with salsa, sliced avocado and some yummy queso!
- Spaghetti – with regular flavored Jimmy Dean sausage instead of ground beef {YUM}. Serve with some buttery crusty bread and maybe a side Caesar salad.
- Shrimp w/ Tomato + Basil pasta – recipe from Kelly Minter’s book above, I just add shrimp because it’s a completely perfect inclusion.
- Salmon w/ Capers and lemons + risotto – Line a baking sheet with tin foil; Salt and pepper your salmon and place skin side down {even if the skin has been removed}. Add a little EVOO, fresh lemon juice, a spoon full of capers on each filet and sliced lemon. Cover and bake at 350° for approximately 25 min. ENJOY! This is a fave.
- Grilled Steak with Potatoes Bravas – I recently found this recipe at Publix and have added it to my mix of recipes because it’s amazing! Andrew loved the sauce so much, he wants to use it on other meats!
Are you hungry now? I hope you at least have an idea or two of supper recipes to add into your regimen. Comment below with your favorite/go-to recipes!
Until next time…
Hey chick! You clearly cook healthier than me??! I will send you one we all love!! I have Magnolia Table(both of them), but need to get Kelly Minter. I am about to start the study Ruth by Kelly…
I also tried a new recipe, Honey Sesame wings. The girls liked them, but pretty expensive ingredients! It was $8 of honey alone?.
If I remember any somewhat healthy ones (doubtful), I will send them on. I cook like my mama and grandmother…

Ha! Nicki, you’re hilarious! I started trying to do healthier meals a few years ago…getting out of that southern cooking cycle was hard!
You.will.LOVE. the Ruth study by Kelly Minter! I did it earlier this year – it’s amazing. I’m so excited for you to start it!
My husband loves wings so send that recipe too when you have a chance.
Love you sister!
