What’s For Dinner? Sandwiches!
As I arrived home from my lunch date today (so good to see you, Catherine!!) Andrew was at home having his lunch. A hodgepodge of leftovers…thanks for cleaning out the fridge, love 🙂
We sat down at our bar-top kitchen table and while he ate I pondered our dinner menu for the week. I was thinking earlier this morning that I wanted to have a “cheap week” of dinners. Meaning, no expensive meats like steak or salmon. And easy fixin’s so I’m not slaving away at the stove at 6:30 in the evenings.
“We’re having sandwiches for dinner”, I proudly announced. He put his face in his hands and began rubbing. “Not me. I’m having shrimp and grits!” he said. I laughed. “Oh, the leftovers from Saturday?”. We went to this amazing restaurant in Charleston – Fleet Landing. He had decided that for dinner tonight he was going to eat my leftovers – shrimp & grits….and they were amazing. If you’re ever in Charleston, you must go. But be prepared to wait…good news is, they’ll take your cell phone number and text you when a table is ready! {Just plan to be close-by!}

I spent some time looking in a few of my favorite cookbooks as well as online for some easy sandwich ideas. Not just your ham & cheese or BLT, but something more unique, but then not quite so fancy as this delicious-looking pulled pork sandwich that takes 6 hours… I know the crock-pot is an amazing thing, but I’m not organized enough to get things together and in a crock pot in the morning. NEXT!
Tonight, while Andrew ate my shrimp and grits, I had a pesto tuna sandwich…correction, Reynolds and I…because he ate about half of my sandwich instead of his tasty (or not-so-tasty) pasta-pick-up dinner. While I had some mental issues with tuna from a can {Andrew and I have both been scarred by our parents eating it as we were growing-up} that he even refused to taste it. I, on the other hand, got past the smell, the memories of tuna salads…and pressed on. I added a slice of Swiss cheese to my sandwich, put it on my George Foreman (because I don’t have a fancy panini press and this works just as well) and in great anticipation, took my first bite. Surprisingly, it was really good! This is the picture Real Simple has of the sandwich…just imagine an oozing piece of Swiss cheese and that’s what I ate!

Croque Monsieur Sandwiches with Pears – it just sounds amazing…
Grilled Turkey, Brie, and Apple Butter Sandwich with Arugula – because who doesn’t love melted brie and apple butter (and my Momma makes some mean apple butter!!)
And lastly, we’ll probably have a B.L.A.T – bacon, lettuce, avocado and tomato sandwich!
